Baby food: Apple & Sweet potato muffin
Since I usually take these muffins when we go out and am often asked the recipe, I decided to post the English translation of my Apple & Sweet potato muffin recipe (here for Japanese article).
Quick and easy cooking with a few dishes to wash!
<ingredients for 5-6 muffins>
Sweet potato:1
Apple:1
Flour:135g
Baking powder:3g
Milk:4TBSP

Peel a sweet potato and cut it into a few pieces. Put them in a pot with water and cook until they become soft. While cooking the sweet potato, peel an apple and chop into small pieces.

After the potato becomes soft enough, drain the pot and mash it in the pot.

Add all the other ingredients (chopped apple, flour, baking powder and milk) into the pot and mix with a spatula.
*Use the pot for mixing as well to minimise dish washing 😉
*If the dough is too hard, add some more milk. If the the dough is too soft, add some more flour.
4.
Fill muffin cases and bake for 15-20 minutes in a preheated oven at 170 degrees (Celsius).
Since the duration and temprature depend on the oven, please make sure that the muffins are well-cooked before feeding your baby!
